Low salt cooking does not have to be tasteless. Some foods will taste different for a while until you get used to new flavors without salt. Herbs and spices can replace salt and complement the natural flavors of food. The following seasoning tips will help you learn how to enjoy foods that are lower in sodium.
.For every 1 tablespoon of fresh herbs suggested in a recipe, substitute 1 teaspoon dried herbs or ¼ teaspoon powdered herbs.
.Use ½ teaspoon of dried herbs for three cups cooked vegetables or one pound of meat. Or, use ¼ teaspoon dried herbs for four servings of food
.Fresh herbs should be crushed between your fingers or in the palm of your hand to bring out their flavors. Herbs should be added during the last hour of cooking when used in long-cooking recipes, such as stews or soups.
.Rub uncooked meat with a garlic clove, sprinkle with black pepper and refrigerate. Prepare several hours before cooking so the meat will absorb the flavors.
. To marinate meat, use a mixture of flavored vinegar, 1-2 teaspoons of oil and assorted spices and herbs.
.Season hamburger patties by squeezing lemon juice into the meat before cooking
.Lemon juice or vinegar can be sprinkled on vegetables after cooking.
.Make an herb mixture by mixing chives, dill, lemon juice, garlic or onion powder into margarine. Use this mixture as a spread on bread, sandwiches or vegetables.
.Use crushed cereal or unseasoned bread crumbs for breading. Add favorite seasonings to the breading.
