INGREDIENTS
| Chicken stock | 2 cups | |
| Raw brown rice | 60 g | |
| Onion, chopped | 1 medium | |
| Fresh spinach, washed well and stemmed | 100 g | |
| Unsalted butter | 1 tablespoons |
METHOD
- Bring the stock to a boil. Add the rice and chopped onions. Stir once. Boil 5 minutes, and then put spinach on top. When spinach wilts, cover the pot and turn heat to low.
- Simmer until liquid on top is evaporated. Put the butter on top. When all the liquid is absorbed, stir it up and serve.
