Recipe Name: Spinach Rice

INGREDIENTS
Chicken stock   2 cups
Raw brown rice   60 g
Onion, chopped   1 medium
Fresh spinach, washed well and stemmed   100 g
Unsalted butter   1 tablespoons
METHOD
  • Bring the stock to a boil. Add the rice and chopped onions. Stir once. Boil 5 minutes, and then put spinach on top. When spinach wilts, cover the pot and turn heat to low.
  • Simmer until liquid on top is evaporated. Put the butter on top. When all the liquid is absorbed, stir it up and serve.
