INGREDIENTS
| Mini pizza base | 2 | |
| Oil | 1 teaspoon | |
| Garlic, chopped | 3 cloves | |
| Finely chopped spinach | 1/2 bunch | |
| Pizza sauce | 2 tablespoons | |
| Mozzarella cheese | 60g | |
| Red onion, thinly sliced | 1/2 | |
| Ripe tomato, diced | 1 | |
| American corn | 1/2 cup |
METHOD
- Preheat oven to 220°C. Lightly spray a non-stick saucepan with oil and heat over medium heat. Add garlic, spinach and salt and pepper. Cook for 1 to 2 minutes. Remove pan from heat, drain excess moisture and set aside to cool.
- Spread bases with pizza sauce. Top with spinach mixture, onion and tomato and cheese on the top. Bake for 15 to 20 minutes, until bases are crisp and cooked. Serve.
