INGREDIENTS
Tomato   1 kg
Onion   15 g
Ginger   10 g
Garlic   2 cloves
Sugar   40 g
Salt   2 tsp
Red chili powder   1/2 tsp
Cinnamon   1" piece
Cloves   2
Cardamom   1
Bay leaf   1
Glacial acetic acid   1/2 tsp
Sodium benzoate   a pinch
METHOD
  • Select red, ripe tomatoes, wash and cut into pieces.
  • Chop onion, ginger and garlic.
  • Tie the whole spices in a muslin cloth.
  • Cook tomatoes, onion, ginger and garlic with the bag of whole spices till tender.
  • Discard bag of spices. Mix in the blender and pass through a sieve.
  • Add sugar to the above tomato puree and cook till thick.
  • Add salt, red chilly powder and cook till done (check by the plate test).
  • Remove from fire, add glacial acetic acid and sodium benzoate dissolved in a little water.
  • Fill hot sauce in a sterilized bottle and close properly.
