Recipe Name: Aalu Rajma Salad (Potato and Kidney Bean Salad)

INGREDIENTS
Potatoes boiled, peeled and cubed   2
Kidney beans boiled   1 cup
Onion finely chopped   1
Green chilli crushed with salt   1
Oil   1 tsp
Salt, pepper and lemon juice to taste
Fresh coriander to garnish
METHOD
  • Heat oil in a pan for a few seconds. Add the onions and green chillies. Fry on medium/high heat for about 1 minute or till the onions are transparent
  • Add the pre-boiled potatoes cubes, kidney beans, salt, pepper and lemon juice. Keep on low heat for about 2 minutes.
  • Garnish with finely chopped fresh coriander.
