Recipe Name: Carrot and Corriander Soup

INGREDIENTS
Large carrots, scrubbed and chopped   2
Large potato,peeled & chopped   1
Coriander leaves   2 bunches
Onion chopped   1
Veg Stock   4 cups
Clove garlic, minced   1
Ginger root   1 tsp.
Freshly ground black pepper   1 tsp
Tumeric powder   1/2 tsp
Jeera powder   1/2 tsp
METHOD
  • Place all ingredients in a large pot,bring to the boil and simmer gently for about 30 minutes, or until the vegetables are tender.
  • Blend in blender until smooth and creamy.Add more stock if necessary to thin the soup.Garnish with fresh corriander leaves.
