INGREDIENTS
| Large carrots, scrubbed and chopped | 2 | |
| Large potato,peeled & chopped | 1 | |
| Coriander leaves | 2 bunches | |
| Onion chopped | 1 | |
| Veg Stock | 4 cups | |
| Clove garlic, minced | 1 | |
| Ginger root | 1 tsp. | |
| Freshly ground black pepper | 1 tsp | |
| Tumeric powder | 1/2 tsp | |
| Jeera powder | 1/2 tsp |
METHOD
- Place all ingredients in a large pot,bring to the boil and simmer gently for about 30 minutes, or until the vegetables are tender.
- Blend in blender until smooth and creamy.Add more stock if necessary to thin the soup.Garnish with fresh corriander leaves.
