INGREDIENTS
| Frozen green peas | 1 cup | |
| Vegetable broth | 1 cup | |
| Chopped onion | 1 | |
| Vegetable oil | 1 tbsp | |
| Spring onion | 1 tbsp | |
| Chopped mint | 2 tbsp | |
| Salt | ||
| Pepper |
METHOD
- In a frying pan, sauté onion and spring onion with oil
- In a saucepan, bring vegetable broth to boil. Add green peas, salt and pepper and cook them for 5 min. Add chopped mint, shallot and onion spring and cook for 2 min.
- Let the soup cool for a while then process in a food processor until smooth. Adjust the seasoning and serve
