INGREDIENTS
Red lentil   50 g
Medium tomatoes   2
Onion   1
Medium carrot   1
Medium potato   1
Water   3 cups
Coriander   1/2 tsp
Butter   1/2 tbsp
Salt
Pepper
METHOD
  • Cook lentils with water on medium heat for 15 minutes or until semi-cooked. Meanwhile chop all vegetables very small.
  • Stir in chopped vegetables, salt and pepper and continue cooking for 20 min. Add coriander and cool the soup slightly, then process it in a blender to a smooth puree.
  • Garnish the soup with paprika and melted butter.
