Recipe Name: Lemon and Coriander Soup

Vegetable stock   1 Cup
Carrots, sliced   1/4 cup
Cabbage, diced   1/4 cup
Spring onion( whites ) sliced   1/4 cup
Mushrooms sliced   1/4 cup
Spring onion ( greens) chopped   2 Tbsp
Green chilli, slit   1
Oil   1 tsp
Salt and pepper   To taste
For the garnish  
Chopped coriander   1 Tbsp
Lemon juice   1 tsp


  • Heat the oil in a vessel.
  • Add the spring onion whites and fry for a minute.
  • Add the ginger and garlic and fry for a few minutes.
  • Add the spring onion greens,mushrooms and saute for a minute or two.
  • Add 4 cups of water and bring the mixture to a boil.
  • Simmer for 10 minutes or until the vegetables are cooked.
  • Take off the flame and stir in the lime juice.
  • Garnish with Coriander leaves.
