Ingredients: |
| Vegetable stock |
|
1 Cup |
| Carrots, sliced |
|
1/4 cup |
| Cabbage, diced |
|
1/4 cup |
| Spring onion( whites ) sliced |
|
1/4 cup |
| Mushrooms sliced |
|
1/4 cup |
| Spring onion ( greens) chopped |
|
2 Tbsp |
| Green chilli, slit |
|

| Oil |
|
1 tsp |
| Salt and pepper |
|
To taste |
| For the garnish |
|
|
| Chopped coriander |
|
1 Tbsp |
| Lemon juice |
|
1 tsp |

Method: |
- Heat the oil in a vessel.
- Add the spring onion whites and fry for a minute.
- Add the ginger and garlic and fry for a few minutes.
- Add the spring onion greens,mushrooms and saute for a minute or two.
- Add 4 cups of water and bring the mixture to a boil.
- Simmer for 10 minutes or until the vegetables are cooked.
- Take off the flame and stir in the lime juice.
- Garnish with Coriander leaves.
