Ingredients:

Ginger   1 kg
Sugar   11/4 kg + 200 g for coating
Water   750 ml
Citric acid   4 g
 

Method:

  • Select ginger without blemishes. Scrape and cut in round slice.
  • Boil ginger pieces till soft. Remove ginger pieces from water.
  • Make sugar syrup using water, sugar and citric acid. Strain the syrup through muslin cloth.
  • Add ginger pieces in sugar syrup. Continue cooking the ginger pieces in syrup till the syrup reaches one-thread consistency. Remove from fire. Keep it overnight.
  • Next day again cook it, for 10-15 minutes again keep it overnight.
  • Third day again cook ginger pieces. When sugar reaches three- thread consistency remove from fire. Remove ginger pieces from sugar syrup. Roll ginger pieces in castor sugar or granulated sugar.
  • Bottle in clean, dry and sterilized bottles.
