Ginger |

11/4 kg + 200 g for coating |
Water |

Citric acid |

Method: |
- Select ginger without blemishes. Scrape and cut in round slice.
- Boil ginger pieces till soft. Remove ginger pieces from water.
- Make sugar syrup using water, sugar and citric acid. Strain the syrup through muslin cloth.
- Add ginger pieces in sugar syrup. Continue cooking the ginger pieces in syrup till the syrup reaches one-thread consistency. Remove from fire. Keep it overnight.
- Next day again cook it, for 10-15 minutes again keep it overnight.
- Third day again cook ginger pieces. When sugar reaches three- thread consistency remove from fire. Remove ginger pieces from sugar syrup. Roll ginger pieces in castor sugar or granulated sugar.
- Bottle in clean, dry and sterilized bottles.
