| Raw mangoes |

| Fenugreek seeds |

| Aniseeds |

| Haldi (Turmeric) |

| Red chilly powder |

Method: |
- Wash the mangoes. Dry them and cut longitudinally according to the required size.
- Grind fenugreek seeds, aniseeds and kalonji coarsely.
- Mix rest of the spices in the coarsely ground spice and mix.
- Add mango pieces to the spice mixture and mix well.
- Transfer the mango pieces to clean, dry jars. add the remaining mustard oil. Takes care to see that pickle is covered with oil.
- Keep the above pickle in the sun for a few days, occasionally shaking it.
