Recipe Name: Mango Pickle

Raw mangoes   1 kg
Salt   125 g
Fenugreek seeds   25 g
Aniseeds   25 g
Kalonji   10 g
Haldi (Turmeric)   10-15 g
Red chilly powder   25-30 g
Mustard oil   250 g


  • Wash the mangoes. Dry them and cut longitudinally according to the required size.
  • Grind fenugreek seeds, aniseeds and kalonji coarsely.
  • Mix rest of the spices in the coarsely ground spice and mix.
  • Add mango pieces to the spice mixture and mix well.
  • Transfer the mango pieces to clean, dry jars. add the remaining mustard oil. Takes care to see that pickle is covered with oil.
  • Keep the above pickle in the sun for a few days, occasionally shaking it.
