Ingredients:

Egg yolk   2
Vinegar   2 tbsp
Salad oil/refined oil   200 ml
Salt   1 tsp
Mustard powder   1/4 tsp
Black pepper powder   1/4 tsp
Castor sugar   1/2 tsp
 

Method:

  • Mix the dry ingredients with egg yolk and blend. Add vinegar to it and beat well.
  • Add oil, a little at time (drop by drop), beating consistently with the rotary beater till the emulsion starts forming.
  • Now add remaining oil in slightly increasing amount, till the entire oil is used up.
  • Mix well and store in bottle with lid. Refrigerate.
