Ingredients:

Cauliflower   1/2 kg
Turnip   1/4 kg
Ginger   40 g
Onion   150 g
Garlic   6-8 pieces
Red chilly powder   20 g
Mustard seeds (powder)   20 g
Garam masala   20 g
Salt   60 g
Vinegar   120 ml
Jaggery (Gur)   120 g
Mustard oil   150 ml
Sodium benzoate   1 g
 

Method:

  • Wash and cut vegetables. Blanch them in boiling water for two minutes. Remove the vegetables and dry them on a clean cloth.
  • Soak jaggery in vinegar.
  • Grind onion, ginger and garlic to a paste.
  • Heat oil in karahi. Fry onion, ginger and garlic paste in it.
  • Add spices (except mustard powder) to the above fried onion-ginger paste and add vegetables and cook for two minutes.
  • Add jaggery- vinegar mixture to the above vegetables mixture and mix well. Cook for five minutes.
  • Remove from fire. Add powdered mustard seeds and sodium benzoate dissolved in litter water.
  • Cool and transfer to clean, dry and air tight jars.
