Method: |
- Wash and cut vegetables. Blanch them in boiling water for two minutes. Remove the vegetables and dry them on a clean cloth.
- Soak jaggery in vinegar.
- Grind onion, ginger and garlic to a paste.
- Heat oil in karahi. Fry onion, ginger and garlic paste in it.
- Add spices (except mustard powder) to the above fried onion-ginger paste and add vegetables and cook for two minutes.
- Add jaggery- vinegar mixture to the above vegetables mixture and mix well. Cook for five minutes.
- Remove from fire. Add powdered mustard seeds and sodium benzoate dissolved in litter water.
- Cool and transfer to clean, dry and air tight jars.
