Method: |
- Peel oranges and wash guavas.
- Cut the fruits into thin slices. Scrape the white, fibrous part from the inner side of orange peels and add to the fruits.
- Put sufficient water to cover the cut fruits. Add citric acid and boil for some time.
- Strain through a muslin cloth and take out extract without pressing.
- Repeat the process with the fruit pieces and take out extract in similar manner twice more.
- Test pectin content by the spirit test.
- Wash and cut orange peel into thin, long shreds.
- Boil the peel two to three times, discarding the water every time.
- Add sugar according to pectin content as in case of jelly. Add orange peel and cook till the jelly is done as tested by the sheet test.
- Pour hot marmalade into clean sterilized bottles and let cool covered with a clean cloth.
- Close the lid, seal with wax and store in a cool place.
