| Raw mango pulp |
|

| Salt |

| Red chilly powder |
|

| Sugar |

| Clove |

| Cinnamon |

| Black Cardamom |
|

| Black pepper |

| Glacial acetic acid |

Method: |
- Wash mangoes and remove their skin.
- Grate the mangoes. Cook them till they are slightly tender add sugar and continue cooking.
- Add salt, red chilly powder and coarsely ground spices. Cook, while stirring frequently till the mixture becomes sufficiently thick. The test for desired consistency is plate test.
- Remove from fire. Add glacial acetic acid. Pour hot chutney into dry wide mouthed sterilized bottles.
- On cooling close their lids. Store in cool, dry place.
