Ingredients:

Raw mango pulp   1 kg
Salt   20 g
Red chilly powder   10 g
Sugar   750 g
Clove   15 g
Cinnamon   15 g
Black Cardamom   15 g
Black pepper   15 g
Glacial acetic acid   1 tsp
 

Method:

  • Wash mangoes and remove their skin.
  • Grate the mangoes. Cook them till they are slightly tender add sugar and continue cooking.
  • Add salt, red chilly powder and coarsely ground spices. Cook, while stirring frequently till the mixture becomes sufficiently thick. The test for desired consistency is plate test.
  • Remove from fire. Add glacial acetic acid. Pour hot chutney into dry wide mouthed sterilized bottles.
  • On cooling close their lids. Store in cool, dry place.
