Ingredients:

Lemon   1 kg
Salt   150 g
Black salt   100 g
Cloves (powered)   2
Ajwain   40 g
Hing   1 g
Black pepper powder   40 g
Sugar   200 g
 

Method:

  • Select round fully mature and juicy lemons. Wash them thoroughly.
  • Dry the lemon and cut them into quarters. Put the pieces in a clean. Dry jar.
  • Add salt, black salt, clove powder, ajwain, hing, black pepper powder and sugar to the lemon pieces and shake well.
  • Keep the pickle in sun for about 10-20 days, occasionally shaking it. The pickle is ready for use when the lemons become soft and their skin turns light brown in colour.
