Method: |
- Select fully ripe and firm tomatoes. Wash and cut into small pieces.
- Cook the tomatoes for 15-20 minutes in stainless steel utensil till they are soft.
- Blend in a blender and strain. Return the puree to rinsed pan.
- Add sugar and salt and continue cooking with constant stirring.
- Cook till the volume is reduced to about one-third of original.
- Cool the product to room temperature.
- Add the preservation (dissolve it in a small volume of puree and mix thoroughly).
Store in sterilized bottles. Close the lids, wax and store in a cool place |
