Ingredients:

Tomato   5 kg
Salt   25 g
Sugar   25 g
Sodium benzoate   1 g per kg of finished product
 

Method:

  • Select fully ripe and firm tomatoes. Wash and cut into small pieces.
  • Cook the tomatoes for 15-20 minutes in stainless steel utensil till they are soft.
  • Blend in a blender and strain. Return the puree to rinsed pan.
  • Add sugar and salt and continue cooking with constant stirring.
  • Cook till the volume is reduced to about one-third of original.
  • Cool the product to room temperature.
  • Add the preservation (dissolve it in a small volume of puree and mix thoroughly).

Store in sterilized bottles. Close the lids, wax and store in a cool place
