Chicken breast   200 g
Vegetable oil   1 tablespoon
Dijon mustard   1 tablespoons
Salt   1/2 teaspoon
Black pepper   1/4 teaspoon
Red chilli powder   1/2 teaspoon
Finely ground walnuts   1 cup
Yellow cornmeal   1 cup
21/2 teaspoon Olive Oil   1


  • Heat the oven to 400 degrees. Pound the chicken breast halves to an even thickness.
  • Add oil with the mustard, salt, pepper and paprika in a shallow bowl and mix well.
  • Combine the pecans and cornmeal on a sheet of wax paper. Dip the chicken pieces in the seasoned oil and then in the nut mixture.
  • Grill for10 minutes, and then turn with tongs and for an additional 15 minutes. Drain on paper towels and serve immediately.
