| Chicken breast |

200 g |
| Vegetable oil |

1 tablespoon |
| Dijon mustard |

1 tablespoons |

| Red chilli powder |
|
1/2 teaspoon |
| Finely ground walnuts |

| Yellow cornmeal |

| 21/2 teaspoon Olive Oil |

Method: |
- Heat the oven to 400 degrees. Pound the chicken breast halves to an even thickness.
- Add oil with the mustard, salt, pepper and paprika in a shallow bowl and mix well.
- Combine the pecans and cornmeal on a sheet of wax paper. Dip the chicken pieces in the seasoned oil and then in the nut mixture.
- Grill for10 minutes, and then turn with tongs and for an additional 15 minutes. Drain on paper towels and serve immediately.
