Ingredients:

Chickpeas (soaked overnight)   250gs
Roasted sesame seed paste (tahini)   5 tbsp
Lemon juice   4 tbsp
Olive oil   2 tbsp
Garlic   3 cloves
Salt   ½ tsp
 

Method:

  • Drain & rinse the chickpeas. Put them in a large pot with lots of fresh water & boil for 60 minutes or pressure cook. Drain the chickpeas thoroughly, preserving the cooking water, grind to a coarse paste
  • Add the garlic & 150 ml of the cooking water to the above & blend to a stiff paste.
  • Add all the other ingredients & mix thoroughly. Leave to stand for 2 hours for flavours to blend.
