| Chickpeas (soaked overnight) |
|
250gs |
| Roasted sesame seed paste (tahini) |
|
5 tbsp |
| Lemon juice |
|
4 tbsp |
| Olive oil |

2 tbsp |
| Garlic |
|
3 cloves |
| Salt |

½ tsp |

Method: |
- Drain & rinse the chickpeas. Put them in a large pot with lots of fresh water & boil for 60 minutes or pressure cook. Drain the chickpeas thoroughly, preserving the cooking water, grind to a coarse paste
- Add the garlic & 150 ml of the cooking water to the above & blend to a stiff paste.
- Add all the other ingredients & mix thoroughly. Leave to stand for 2 hours for flavours to blend.
