Ingredients:

Milk   250 ml
Butter   8 teaspoon
Eggs   4
Flour   8 teaspoon
Spinach   300 g
Salt   1/2 teaspoon
Black pepper   1/4 teaspoon
 

Method:

  • Melt the butter in a sauce pan, stir in the flour and cook for two minutes.
  • Add milk, stirring continuously, and boil for two minutes.
  • Mix chopped, steamed and mashed spinach, pepper and salt and let it cool down.
  • Add egg yolks to this mixture.
  • Beat the egg white to very stiff stage and fold them into this mixture.
  • Pour into a dish and bake till it becomes brown. It would take 20 minutes approximately.
  • Spinach souffle' is ready. Serve hot.
