Ingredients:

Potatoes (small round)   200 g
Spring onion   50 g
Capsicum   40 g
Coriander (Dhania) leaves   2 tbsp
Lettuce/Cabbage leaves   2 large
Thousand island dressing   6 tbsp
 

Method:

  • Boil potatoes and peel them. Cut into cubes.
  • Chop spring onion and capsicum finely.
  • Mix potatoes, Thousand island dressing and chopped vegetables.
  • Serve chilled over lettuce or cabbage leaves.
