For caramel |

Method: |
For preparing caramel:
- Mix sugar and water in a small pan, cook in medium heat without stirring.
- When it starts to melt, tilt the pan gently so that sugar is melted evenly.
- When it turns golden brown, pour in to round pudding mould. Coat the sides also by tilting the mould properly.
For custard:
- Beat 2 egg whites lightly.
- Beat other 2 eggs with milk, which is mixed with milk powder, custard powder and sugar.
- Add essence, beaten egg whites and mix gently.
- Pour into prepared round mould. Cover with lid or aluminium foil.
- Pour more water in pressure cooker. Put a stand and then place this dish properly on top.
- Close the cooker lid and steam cook for 1 to 1 ½ hours till custard is set.
- Chill in refrigerator for few hours. Unmould on a decorative serving dish and then serve.
