Ingredients:

Grated red pumpkin   2 cups (heaped)
Sugarless koa (mawa)   1 cup
Sugar   1 ½ cups
Saffron   little
Powdered nutmeg   little
 

Method:

  • Remove thick outer skin, seeds and fibrous portion from pumpkin.
  • Grate the pumpkin using stainless steel grater. Measure it and then pressure cook till one whistle without adding water to it.
  • Allow to cool and squeeze out if there is excess moisture.
  • Mix with crumbled koa, sugar, saffron (dissolved in warm water) and pour it in a greased ovenproof dish.
  • Bake in a pre-heated oven (250 degrees C) till top turns reddish brown in colour (approximately 30 to 45 minutes depending upon the oven).
