Ingredients:

Soft khoya   100 g
Maida   25 g
Soda-bi-carb   a pinch
Fat   for deep frying
Water   1 tsp
 
For syrup:
 
Sugar   200 g
Water   125 ml
Milk   1 tsp (for cleaning)
 

Method:

  • Mash the khoya. Mix soda with 1 tsp water. Add maida, soda and water mixture to khoya and mix well.
  • Add sugar to water. Bring to boil. Clean the syrup with milk. Cook the syrup for a few minutes and let it cool.
  • Shape the khoya mixture very smooth balls or rolls (6-7).
  • Heat fat in a karahi. Remove karahi from heat and add gulab jamuns.
  • When bubbling stops, put the karahi back on slow fire and fry gulab jamuns to golden brown colour.
  • Soak the gulab jamuns in syrup. Allow to soak for half an hour. Heat on slow fire for a few minutes and serve hot.
