Method: |
- Prepare a souffle' dish by tying round it a double band of grease-proof paper with its fold at the bottom so that it stands about 2" above the top of the dish.
- Extract the juice from the lemon.
- Soak the gelatin in 1 tbsp of cold water.
- Separate the egg yolk and put it in a pan with lemon juice, yellow colour and sugar.
- Whisk this mixture over a pan of hot water till it becomes creamy.
- Place soaked gelatin over a pan of hot water and let it dissolve.
- Add the dissolved gelatin to the egg yolk mixture and stir.
- Beat egg white and whip the cream.
- Fold in the whipped cream, beaten egg white and vanilla essence to the egg yolk mixture.
- Pour this mixture into the prepared souffle' dish and put in the refrigerator to set.
- Remove the paper and serve garnished with cream, grated lemon rind and glazed cherry.
