| Milk |

| Mango pulp |

Method: |
- Heat milk and sugar. Add beaten egg yolk and cook in a pan over hot water with constant stirring.
- When this mixture becomes thick like sauce, remove from heat.
- Make a puree of mango pulp with suitable colouring and flavouring.
- Let it cool down and fold in the whipped cream, add mango puree and finally add the whisked egg white.
- Pour the mixture into an ice cream tray and keep in freezer. Set the refrigerator at the coldest.
- Whip again when half frozen and return to freezer.
- Let it freeze until the mixture is firm.
- Serve chilled in an ice cream cup.
