Orange |

Pineapple slice with syrup |

Orange jelly |
|
25 g |
Castor Sugar |
|
2 tsp |
Orange rind |
|
1/8 tsp |
Orange squash |

1 tsp |
Cream |

Method: |
- Chop pineapple slice finely.
- Add sufficient water to make the pineapple syrup up to 125 ml.
- Heat the syrup and dissolve orange jelly in it.
- Beat the cream with sugar till thick.
- Add 2/3 of the cream to jelly mixture and stir for two minutes.
- Add pineapple slices, oranges, orange rind and orange squash to this mixture.
- Mix well, pour into a moist jelly mould and put to set in the fridge.
- Just before serving, dip the mould in hot water for a few seconds and un-mould on a plate.
- Beat the remaining cream and spread around the mould and decorate with orange segments.
