Ingredients:

Milk   300 ml
Fresh Bread   2 slice
Sugar   2tbsp
Butter   1 tbsp
Egg   3
Jam   2 tbspn
Lemon Rind   1 lemon
Castor sugar   2 tbsp
 

Method:

  • Make crumbs of fresh bread.
  • Heat milk and pour it on the crumbs. Add butter, lemon rind and sugar and keep the mixture for some time for the bread to swell.
  • Beat 2 eggs and mix well with the above mixture. Bake in oven (380 degree F) for half an hour.
  • Now, spread a thick layer of jam on the top the pudding.
  • Take the remaining egg and whisk its white till stiff and fold in half of the castor sugar.
  • Pile this egg white meringue on top of the pudding above jam. Sprinkle the remaining castor sugar on it.
  • Put in a moderately hot oven for 15 minutes till meringue becomes crisp. Serve.
