Ingredients:

Boneless, skinless chicken breasts, halved   200 g
Butter, melted   2 tsp
Salt   1/2 tsp
Freshly ground pepper
Flour   2 tbsp
Dry mustard   1/4 tsp
Cinnamon   1/2 tsp
Ground ginger   1/8 tsp
Orange juice, boiling   1/2 cup
 

Method:

  • Preheat oven to 375 degrees.
  • Place chicken breasts in baking dish.
  • Brush with melted butter.
  • Sprinkle with salt and pepper. Bake 15 minutes, uncovered.
  • Put remaining butter in small saucepan.
  • Add flour, salt, mustard, cinnamon, and ginger.
  • Cook, stirring for 2 to 3 minutes
  • Remove from heat and pour on boiling orange juice, beating vigorously with a wire whisk.
  • Cook, stirring, 5 minutes or until thickened
  • Pour over chicken and bake another 15 minutes.
  • Set oven to broil and brown chicken for 2 to 3 minutes before serving.
