Ingredients: |
| Cauliflower |
|
400g |
| Rice, washed and drained |

2 tbls. |
| Turmeric paste |
|
1 tsp |
| Chilli paste |

1/2 tsp |
| Jeera paste |

1 tbsp |
| Coriander paste |
|
1/2 tbsp |
| Garam Masala |
|
1/2 tsp |
| Bay leaves |
|
2 nos |
| Oil |
|
3 tsp |
| Ghee |
|
2 tsp |
| Water |
|
1 cup |
| Salt and sugar to taste |

Method: |
- .Heat oil and fry cauliflower until just brown. Remove from pan. Fry all the masala pastes except garam masala and bay leaves for several minutes, sprinkling water if necessary.
- When the masalas are done, add the rice and fry for 5-7 mins. When the rice is well fried, add a cup of water salt and sugar to taste. Cover pan and simmer over medium heat until rice is nearly done, but not dry. Add the cauliflower.
- Mix well, cover and cook for several mins. longer. By this time rice and cauliflower should be well cooked and there should be some gravy in the pan.
- Stir in the garam masala paste. In a separate pan, heat ghee and fry the bay leaves for a couple of mins. Pour over cauliflower-rice mixture.
