Method: |
- Boil, Peel and mash potatoes. Chop onion and ginger.
- Heat 1 tsp fat. Add chopped onion, ginger, spices and mashed potatoes.
- Fry for 2-3 minutes and keeps aside to cool.
- Wash capsicum and remove stalk along with a thin slice from top.
- Fill with potato stuffing and replace top (secure with tooth picks).
- Heat 2 tsp fat and cook capsicum in it on slow fire in a covered pan till tender and browned.
