Ingredients:

Brown rice, cooked   1 cup
Black beans   1/2 cup
Corn   400g
Fresh tomatoes, diced   4
Red onion, chopped   1/2 cup
Chilli pepper, seeded and diced   1
Fresh lime juice   2 Tbsp
Oil   1/2 tsp
Salt   1/2 tsp
Freshly ground black pepper   1/4 tsp
 

Method:

  • Cook brown rice.
  • In a medium bowl, combine black beans, corn, tomatoes, onion, lime juice, oil, salt, pepper.
  • To serve, place a scoop of hot rice in a bowl or on a plate, top with a scoop of the black bean mixture. Stir together before eating.
