Ingredients:

Chick pea   250g
Red pepper   1
Finely chopped fresh mint   1 Tbsp
Oil   1/4 tsp
Lemon juice   2 Tbsp
Fresh coriander   1 Tbsp
 

Method:

  • Put the chickpeas in a serving bowl. Half the tomatoes scoop out the pips and chop the flesh and add to the chickpeas together with the red pepper.
  • Combine the oil with the remaining ingredients and pour over the chickpea salad.
  • Toss and serve.
