Ingredients:

Butter   1/2 tsp
BOnion, chopped   1 1/2 Cup
Bay leaf   1
Salt   1 tsp
Pepper, diced   2
Broccoli, chopped   4 Cups
Veggie stock   21/2 Cups
Water   4 Cups
Basil   1/2 tsp
 

Method:

  • Melt butter in the pan.Put onions,bay leaf and salt in the pan and saute over medium heat, until onions are tender (about 5-7 minutes).
  • Add pepper, basil, broccoli, veggie stock and water.
  • Bring to a simmer, cover and continue cooking for 10 minutes, stirring occasionally, until broccoli is well cooked.
  • Discard the bay leaf and puree the soup in batches.
  • Season with pepper. Serve hot.
