Ingredients:

Broccoli florets   11/2 cup
Carrot, sliced   1 medium size
Red bell pepper, sliced   1/2 large
Water   2 tbsp
Cornstarch   1 tsp
Sugar   1/2 tsp
Unsweetened pineapple juice   2 tbsp
Reduced-sodium soy sauce   1/2 tbsp
Rice vinegar   1/2 tbsp
Dark sesame oil   1/2 tsp
 

Method:

  • Combine broccoli, carrots and bell pepper in large nonstick pan. Add water and bring to a boil. Reduce heat, cover and steam for 4 minutes. Drain vegetables
  • Meanwhile, combine cornstarch, sugar, pineapple juice, soy sauce, and vinegar in small bowl and blend until smooth.
  • Stir soy sauce mixture and add to the pan. Cook and stir until sauce boils and thickens.
  • Return vegetables to the pan and toss with sauce. Add oil and toss well.
