Ingredients:

Zucchini   300 g
Olive oil   2 tsp
Chopped onion   1/3 cup
Garlic powder   1/4 tsp
Black pepper   1/4 tsp
Oregano   1/4 tsp
Tomatoes chopped   3/4 cup
 

Method:

  • Cut zucchini in half lengthwise, then each half into thirds crosswise.
  • Heat oil in a pan. Add zucchini, cut side down and cook until lightly browned.
  • Add onion and seasonings. Top with tomatoes.
  • Cover and cook over medium heat until squash and onion are tender and sauce slightly thickened.
