Ingredients:

Canola oil   1 tbsp
Carrot, thinly sliced diagonally   1 medium size
Broccoli florets   1 cup
Fresh, sliced mushrooms   1 cup
Snow peas   85 g
Tomato, cut into wedges   1 small size
Red wine vinegar   1 tbsp
 

Method:

  • Heat oil and add carrots and broccoli, cook for 2 minutes, stirring constantly. Add mushrooms, snow peas and seasoning and cook for 2 more minutes.

  • Add tomato wedges and red wine vinegar, stir for another minute or until vegetables are crisp-tender
