Prep Time Cook Time Serves



Basmati rice   1 cup
Amaranth leaves   4 bunches
Onions   3
Oil   1 tbsp
Lemon   1
Curry leaves   few
Coriander seeds   1 tsp
Fenugreek   ¼ tsp
Asafoetida   a pinch
Cinnamon   1 inch piece
Cloves   2
Red chillies   6
Grated fresh coconut   1 tbsp
For seasoning  
Mustard seeds   ½ tsp
Black gram dhal   1 tsp
Bengal gram dhal   1 ½ tsp


  • Soak rice for 10 minutes. Dice onions finely. Wash and separate leaves and cut finely.
  • Heat little oil and fry coriander seeds, fenugreek, asafetida, cloves, cinnamon, red chillies. Add grated coconut at the end and fry for a minute. When it cools, powder them.
  • Cook rice till each grain is separated. Allow it to cool.
  • Heat oil in a pan, add mustard seeds, black gram dhal, Bengal gram dhal, curry leaves and onions. Stir for few minutes and add cut greens. Fry till raw flavour goes in high flame.
  • Add rice, salt and powdered spices and stir for few minutes.
  • Remove from fire and squeeze lime juice and serve hot.
