Ingredients:

Raw shrimp, deveined   100 g
Vegetable or meat broth   2 cups
Salt   1 tsp
Freshly ground black pepper   1/2 tsp
Olive oil   1 tbsp
Medium onion, chopped   1
Red or yellow bell pepper, roasted and chopped   1
Garlic cloves   3
Diced tomato   1
Saffron   2-3 threads
 

Method:

  • Saute the onions in olive oil and add the bell pepper and garlic. Mix in the diced tomatoes and saffron. Add the vegetables to the broth. Simmer for 15 minutes.
  • Add the shrimp and simmer for 5 to 7 minutes, just until the shrimp turn opaque and pinkish. Serve hot.
