Ingredients:

Olive oil   1 tsp
Medium onion, chopped   1
Thinly sliced carrots   1 cup
Chicken broth   2 cups
Diced tomato   1
Cooked boneless chicken   200 g
A few spinach leaves
 

Method:

  • Heat oil in large saucepan over medium-high heat. Add onion; cook and stir about 5 minutes or until golden brown. Add in carrots and broth and bring to a boil. Reduce heat and simmer for 5 minutes. Add tomatoes and simmer till carrots are tender..
  • Add chicken and spinach leaves and cook for a while.
