Refined flour (Maida) |

Method: |
- Prepare the cake tin by greasing and dusting with flour or by lining with paper.
- Sift the flour and baking powder together two to three times.
- Cream the butter and sugar together in bowl till light and fluffy using a wooden spoon.
- Separate the egg yolk and whites.
- Add egg yolk to the above mixture and beat will.
- Beat the egg white to a stiff peak stage.
- Now add the flour and egg white alternately into the above mixture using cut and fold method. Add vanilla essence.
- Pour the mixture into the prepared cake tin and bake in a moderate oven (350 degree F) for 20-25 minutes (or till a tooth pick or knife inserted into it comes out clean.
- Remove the cake from tin. Cool on wire rack before cutting.
