Prep Time Cook Time Serves



Milk   2 tbsp
Cream   1 cup
Egg   2
Castor sugar   4 tbsp
Gelatin   3 tsp
Vanilla essence   few drops


  • Prepare a souffle' dish by tying round it a double band of grease-proof paper with its fold at the bottom so that it stands about 2" above the top of the dish.
  • Soak the gelatin in 1 tbsp of cold water.
  • Separate the egg yolk and put it in a pan with sugar.
  • Whisk this mixture over a pan of hot water till it becomes creamy.
  • Place soaked gelatin over a pan of hot water and let it dissolve.
  • Add the dissolved gelatin to the egg yolk mixture and stir.
  • Beat egg white and whip the cream.
  • Fold in the whipped cream, beaten egg white and vanilla essence dissolved in milk to the egg yolk mixture.
  • Pour this mixture into the prepared souffle' dish and put in the refrigerator to set.
  • Remove the paper and serve garnished with cream and glazed cherry.
