Frozen green peas   1 cup
Vegetable broth   1 cup
Chopped onion   1
Vegetable oil   1 tbsp
Spring onion   1 tbsp
Chopped mint   2 tbsp


  • In a frying pan, sauté onion and spring onion with oil
  • In a saucepan, bring vegetable broth to boil. Add green peas, salt and pepper and cook them for 5 min. Add chopped mint, shallot and onion spring and cook for 2 min.
  • Let the soup cool for a while then process in a food processor until smooth. Adjust the seasoning and serve
