Ingredients: |
| Carrot (Choppedinto small cubes) | | 2 large |
| Onion finely chopped | | 1/2 large |
| Green chilies( slit) | | 3 |
| Curry leaves | | afew |
| Cumin seeds | | 1 tsp |
| Turmeric Powder | | 1/2 tsp |
| Asafetida | | 1/2 tsp |
| Coconut Powder (Dry) | | 2 tbsp |
| Lime juice | | 1 tbsp |
| Chili Powder | | 1/2 tsp |
| Oil | | 1tbspn |
| Salt | | to taste |
| Fresh coriander | | chopped for garnishing |

Method: |
- Heat oil in a pan , splutter cumin seeds, add turmeric powder, Asafetida, and curry leaves , saute for a minute
- Add chopped onions, green chilies and saute till onions turn tender.
- Now add carrot, salt, chili powder and cook till carrot gets cooked
- Sprinkle lime juice and coconut powder and cook for another 2 minutes.
- Garnish with fresh chopped coriander and serve it with hot phulkas or rice.
